Roaming Nobles has kept their mission simple: create great tasting beer that just happens to be non-alcoholic. Inspired by Germany’s beer culture of offering traditional styles and “alkoholfrei” beers, a unique opportunity was identified in Oregon to bring high-quality non-alcoholic choices. They also partner with The Forest Park Conservancy to preserve the ideal environment to roam and enjoy a nonalcoholic bev along the way.
In choosing to not use preservatives in their beverages, Roaming Nobles also makes a beverage that has the ideal environment for microbes. In choosing pasteurization to ensure that this is not the case, they work with Fermly on ensuring that every batch is clean of pathogens, microbes, and spoilers, creating a shelf-stable product that can be sold in natural foods stores like Whole Foods. Per Marla Hoban: “It is essential that you pasteurize non-alcoholic beer. We do not use preservatives and the ingredients in craft beer; hops, yeast, and water, could be an environment in which microbes or other bugs could grow.”
Quick pathogen testing is invaluable for deciding if a product can head for distribution, but plating is a key service that ensures that the product is safe and that pasteurization was effective.
